The Chewiest Christmas Cookies
If Santa has a favourite cookie, we’re pretty sure this is it. 🎅🍪 These chewy chocolate chip cookies are soft in the middle, deliciously golden around the edges and packed with chocolate chips, the perfect treat to leave out on Christmas Eve.
They’re quick and easy to make, with simple ingredients you probably already have in the pantry. And when it comes to the chocolate chips, there’s really only one rule: measure them with your heart. ❤️
Ingredients
- 150g butter, melted and slightly cooled
- ½ cup brown sugar
- ½ cup white sugar
- 1 egg
- 1½ cups plain flour (approximately 180g)
- ½ teaspoon baking soda (not baking powder)
- Chocolate chips, measured with your heart ❤️
How to Make Santa's Favourite Chocolate Chip Cookies
1. Mix the Butter and Sugars
Preheat your oven to 180°C conventional or 160°C fan bake and line a baking tray with baking paper.
Add the melted, slightly cooled butter, brown sugar and white sugar to a large bowl. Mix until well combined.
2. Add the Egg
Add the egg and mix until fully incorporated.
3. Add the Dry Ingredients
Add the plain flour and baking soda. Mix until a soft cookie dough forms.
Don't overmix the dough! Just mix until the flour has been incorporated.
4. Add the Chocolate Chips
Now comes the important part: add your chocolate chips.
How many? That's between you and Santa. 🎅
Stir them through the dough, adding as many as your heart tells you.
5. Scoop and Bake
Scoop the dough into balls and place them onto your prepared baking tray, leaving plenty of space between each cookie. These cookies will spread as they bake.
Bake for approximately 9–11 minutes, until the edges are lightly golden but the centres still look slightly soft.
For chewy cookies, don't wait for the centres to look completely baked. They'll continue to set as they cool.
6. Cool
Leave the cookies on the baking tray for 5–10 minutes before transferring them to a wire rack.
They'll firm up as they cool while keeping that deliciously soft and chewy centre.
Tips for Chewy Chocolate Chip Cookies
For the best chewy texture, don't overbake your cookies. Taking them out while the centres still look slightly underdone is the secret to keeping them soft.
Make sure you leave plenty of room between the dough balls on the baking tray, these cookies are meant to spread!
If your dough feels particularly soft, you can refrigerate it for 20–30 minutes before baking. This can help control how much the cookies spread.
And, of course, don't be shy with the chocolate chips. There is no such thing as too many at Christmas. 🍫
